I have been trying to adopt a new healthy eating lifestyle by only eating whole foods and eliminating processed foods. I must say that it’s going exceptionally well. It’s not as bad as I thought. I’ve been making my own juices, smoothies and salad dressings. Yo! Have you seen what they put in our salad dressings? Can you even pronounce half of those ingredients? I know I can’t.

My breakfast every morning includes sliced Fuji Apples (I love these and Pink Ladies) and peanut butter. When I first started my lifestyle change I was eating Jiffy Peanut Butter with my apples. Why not? Peanut butter comes from peanuts and it’s healthy and full of protein, right? Wrong! I stumbled across this article that really got me to re-think eating processed peanut butter. It should be mostly peanuts and not all those other ingredients that manufacturers put in it.

In my quest to adopt a healthier lifestyle, I decided to try my hand at making my own homemade peanut butter using my Vitamix mixer. I researched a few recipes and sort of created my own recipe using ingredients that I like. Can I say it turned out delish! No, it didn’t taste like Jiffy….it tasted better.

How to make homemade peanut butter.

Homemade Peanut Butter
Ingredients
  • 2 cups Spanish roasted peanuts (remove shells & skin)
  • 1 1/2 teaspoons honey (optional)
  • 1 1/2 tablespoons peanut oil (add more for a creamier texture)
Directions
  1. Place the peanuts in a food processor or blender.
  2. Add the honey.
  3. Mix peanuts and honey while adding the oil, processing on low. I found that processing the peanut butter on a low speed worked better for me.  If you want a creamier peanut butter, add more oil. Store in a sealed container in the refrigerator. I used Ball Brand Glass Storage Jars with Plastic Caps – 4 (4oz) to store my peanut butter.
