There was a great sale on pasta this week at the grocery store. The pasta was only 88¢ and I had a coupon for $1 off if you purchased 2. Therefore I only paid 38¢ per box!! So it’s pasta all this week!! I’m not a fan of pasta, but for 38¢ I can learn to love it!! I adapted the following Basil Chicken and Pasta recipe from All Recipes.

Basil Chicken and Pasta

Ingredients:
1 (12 ounce) package penne pasta

3 tablespoons butter

1 pound skinless, boneless chicken

breast halves – cut into 1/2 inch cubes

3 cloves garlic, minced

1/2 teaspoon ground black pepper

2 teaspoons fresh basil

1/4 cup fresh mozzarella

Directions:

1. In a large pot with boiling salted water cook pasta until al dente. Drain.

2. Meanwhile, in a large skillet melt the butter or margarine. Add the chopped chicken and garlic, saute until lightly brown and juices run clear. Stir in the ground black pepper, basil, and mozzarella cheese. Bring to a boil and simmer for 3 to 4 minutes.

3. Toss drained pasta with basil sauce and serve immediately.
